Waste Characterization and diagnosis of a bakery's practices
Stratzer first proceeded to a waste characterization for the Première Moisson bakery on Maisonneuve street, in Montreal. Over the course of a week, Stratzer’s team studied and sorted 100% of the garbage, recyclables and organics generated on the site. Although the rate of waste recovery is excellent for this site, Stratzer identified several possible improvements. These include implementing organics collection points in the customer area and reducing the rate of recyclables eliminated.
